Boneless Chicken Saute - cooking recipe

Ingredients
    2 chicken breasts (boneless), cut in bite-size pieces
    1 large onion, chopped
    1 can or 1/2 lb. fresh mushrooms
    vermouth
    butter or margarine
    salt and pepper
    parsley, thyme, sweet basil (optional)
    light cream (optional)
Preparation
    In heavy skillet, melt butter and brown onion.
    Add chicken and saute 10 minutes.
    Add mushrooms, spices and 1/2 cup water. Simmer, uncovered, 10 minutes to reduce liquids.
    Add vermouth and simmer, uncovered, 5 minutes.
    Serve over rice.
    May add light cream and heat.
    Serve over egg noodles.
