Pineapple Lemon Salad - cooking recipe
Ingredients

1 (20 oz.) can unsweetened crushed pineapple
1 (3 oz.) pkg. sugar-free lemon Jell-O
1 Tbsp. fresh lemon juice
1 c. (8 oz.) plain nonfat yogurt
Preparation

Drain pineapple and set aside.
To the pineapple juice, add enough water to make 2 cups of liquid. Bring 1 cup of liquid to a boil. Add gelatin and stir until dissolved. Add remaining liquid and lemon juice. Gradually add yogurt, mixing well. Chill until thick, but not set. Add drained pineapple.
Pour into square container.
Chill and serve on lettuce leaves or as you like.
