Potato Pancakes - cooking recipe

Ingredients
    3 large potatoes, peeled
    3 Tbsp. finely grated onion
    2 eggs
    1 tsp. salt
    pepper to taste
    1/3 c. all-purpose flour
    oil for frying
Preparation
    Grate the potatoes by hand or in a food processor.
    Stir in the onion, eggs, salt, pepper and flour.
    Heat a thin layer of oil in a large heavy skillet.
    Drop the potato mixture by heaping tablespoonfuls into the oil, flattening each mound with a spatula. Fry the pancakes for about 4 minutes (until golden brown) on each side.
    Drain on paper towels.
