Jobneh (Syrian Cheese) - cooking recipe

Ingredients
    1 gallon milk
    2 Junket tablets
    salt
Preparation
    Heat the milk just enough to get the chill out.
    Melt 2 Junket tablets in 2 or 3 tablespoons warm water.
    Stir in milk for about 2 minutes.
    Cover with lid and a large towel or warm cloth for 2 hours.
    Pour into a cheesecloth and let all the water drain.
    When cheese settles in bottom of bag, shape smoothly with your hands (cupping the hands) making sure all the water drains out. Sprinkle with salt.
