Cheese Stuffed Fillets - cooking recipe

Ingredients
    8 small thin fillets of sole or flounder
    1 tomato, peeled and chopped
    1/2 lb. Mozzarella, grated
    pinch of thyme
    3 Tbsp. grated Parmesan or Romano cheese
    3 Tbsp. butter or oil
    1/4 c. onion, minced
    1/2 c. dry white wine
Preparation
    Combine and blend well together the tomato with Mozzarella cheese, thyme and grated cheese.
    Spread mixture on each fillet. Roll and fasten with toothpicks.
