Lemon Curd - cooking recipe
Ingredients

3 large lemons
5 eggs
1 c. sugar
8 Tbsp. margarine or melted butter
Preparation

Grate lemon rind into blender.
Squeeze lemons and strain juice into blender. Add eggs and sugar. Turn on motor and add hot melted butter gradually.
Place in a heavy saucepan and cook over moderate heat for 4 minutes until thickened.
Place in two small containers. Chill and serve on toast for breakfast or use in tarts.
