Little Cheesecakes - cooking recipe

Ingredients

6 chocolate cookies
1 large egg
1 tsp. vanilla
1 c. cottage cheese
1/4 c. sugar
2 Tbsp. strawberry preserves

Preparation

Heat oven to 325\u00b0.
Line 6 cups of a muffin pan with foil baking cups.
Finely crumble one cookie into each liner.
Blend cottage cheese, egg, sugar and vanilla until smooth.
Pour into muffin cups.
Bake for 25 to 30 minutes.
Cool in pan on wire rack.
Remove foil cups from pan.
Refrigerate until chilled. Top each with 1 teaspoon of preserves before serving.
