Lemon Squares - cooking recipe
Ingredients

1 c. flour
1/2 c. oleo
1/4 c. confectioners sugar
2 eggs
1 c. sugar (regular)
1/2 tsp. baking powder
1/4 tsp. salt
2 Tbsp. lemon juice
grated lemon rind
Preparation

Blend the first 3 ingredients together and press evenly into an ungreased 8 x 8-inch square pan.
Bake for 20 minutes at 350\u00b0. Beat the remaining ingredients until light and fluffy; pour over hot crust.
Bake 20 minutes more; do not overbake.
Sprinkle with confectioners sugar.
Cut into 2-inch squares.
Makes 16 squares.
