Baked Sausage Hash With Eggs - cooking recipe

Ingredients
    4 medium potatoes, peeled and cubed
    1 1/2 lb. hot Italian sausage
    1/3 c. butter or margarine
    1 large onion, chopped
    1 large green bell pepper, chopped
    1/2 lb. sliced fresh mushrooms
    1/2 c. half and half
    1 c. shredded Monterey Jack cheese
    1/4 c. sliced green onion with tops
    1/4 c. minced fresh parsley
Preparation
    Cook potatoes, drain and pat dry with paper towel.
    Remove the casings from sausage.
    Cook sausage in a large skillet until browned, stirring to crumble; drain well and set aside.
    Melt butter in skillet over medium heat.
    Add potatoes and onion; saute until the onion is tender.
    Add bell pepper and mushrooms; saute 3 to 4 minutes.
    Stir in reserved sausage.
    Transfer mixture to 12 x 8-inch baking dish.
