Black Beans, Cheese And Brown Rice Casserole - cooking recipe
Ingredients

1 1/2 c. brown rice
2 Tbsp. oil
3 cloves garlic, pressed
1 large onion, chopped finely
1/2 c. diced green pepper
2 c. cooked black beans
8 oz. Ricotta cheese
1/4 c. milk
3 1/2 c. grated Cheddar cheese
pepper or hot sauce, to taste
Preparation

Cook rice according to package directions.
Heat oil in saute pan over medium heat.
Add garlic, onion and green pepper and cook until clear.
Stir into beans then mix with rice.
Stir milk into Ricotta cheese.
Blend in 3 cups Cheddar cheese.
Layer in casserole beans, cheese, ending with beans.
Add pepper or hot sauce if desired.
Bake for 30 minutes at 350\u00b0.
Just before serving sprinkle with remaining cheese.
Allow cheese to melt. Serves 6.
