Squash Casserole - cooking recipe

Ingredients
    3 lb. fresh yellow squash
    2 Tbsp. onion, chopped
    2 medium carrots, grated
    1 can cream of chicken soup
    1 c. sour cream
    1 (7 oz.) pkg. Pepperidge stuffing mix
    salt and pepper to taste
    2 oz. pimentos, chopped and drained (optional)
Preparation
    Slice and cook squash in a little water; drain and mash.
    Add onion, carrots, soup and sour cream (and pimentos); blend.
    Pour into greased casserole.
    Top with stuffing mix (and peanuts). Bake at 350\u00b0 for 30 minutes or until it bubbles.
    Serves 8.
