September Relish - cooking recipe

Ingredients
    2 c. onions, chopped fine
    2 c. cabbage, chopped fine
    2 green peppers, chopped fine
    4 c. green tomatoes, chopped fine
    4 c. green cucumbers, chopped fine
    1 c. sweet red pepper, chopped fine
    1/2 c. salt
    5 to 6 c. vinegar
    4 c. white sugar
    2 tsp. mustard
    1/2 tsp. turmeric
    2 tsp. paprika
Preparation
    Add salt to chopped vegetables and let stand overnight.
    Press out juice and drain.
    (If desired, run a little water over the mixture and drain.
    If this is done, the relish is not quite as salty.)
    Add remaining ingredients.
    Bring to a boil and let boil slowly for 1 hour, stirring occasionally.
    Makes 5 or 6 pints.
