Ingredients

2 1/2 Tbsp. cornstarch
2/3 c. sugar
1 c. water
1 Tbsp. fresh lemon juice
few drops red food coloring
1 qt. fresh strawberries, washed, hulled and drained
1 (9-inch) baked pie shell, cooled
Cool Whip
Preparation

Mix cornstarch and sugar in heavy saucepan.
Add water gradually, stirring until smooth.
Add lemon juice.
Cook over moderate heat, stirring constantly, until thickened and clear. Add enough food coloring to make sauce ruby red.
Cool sauce completely.
Halve or slice berries and add to sauce and stir gently until well coated.
Put into shell and cover with Cool Whip.
