Hot Fish Potato Salad - cooking recipe

Ingredients
    1 lb. fresh fish fillets, cut in 1-inch chunks
    6 slices cooked bacon, crumbled (reserve bacon fat)
    1/2 c. sliced celery
    1/2 c. chopped onion
    chopped parsley
    3 Tbsp. sugar
    1 Tbsp. flour
    1/2 tsp. paprika
    1/4 tsp. salt
    1/4 tsp. celery seed
    1/2 c. wine vinegar
    1 c. water
    3 c. sliced cooked potatoes
Preparation
    Saute celery and onion in bacon fat until tender; combine sugar, flour, paprika, salt and celery seed.
    Stir mixture into sauteed vegetables.
    Add vinegar and water gradually.
    Cook until thickened, stirring constantly.
    Add potatoes, bacon and fish; mix lightly, cover and cook over low heat for 10 minutes until fish flakes easily when tested with fork; sprinkle with parsley.
