Creole Red Beans And Rice - cooking recipe

Ingredients
    1 lb. bag dry small red beans
    1 large onion, cut
    1 clove garlic minced
    2 tsp. salt
    1 tsp. oregano or marjoram
    1 bay leaf
    1 tsp. pepper
    1 c. celery chopped
    1 green pepper
    1 lb. hot sausage, cut in 1-inch pieces (Hillshire Farm hot sausage or ham)
Preparation
    Cover beans with fresh water.
    Add all ingredients and meat. Cook slow and long.
    Serve over cooked rice.
    Garnish with green onions, serve with cornbread and salad.
