Old Fashioned Potato Salad - cooking recipe

Ingredients
    2 lb. cooked peeled potatoes (6 medium)
    3 hard-cooked eggs, coarsely chopped
    1 c. chopped onions
    1 c. sliced celery
    2 Tbsp. chopped parsley
    1/2 c. vegetable oil
    1/4 c. tarragon vinegar
    2 tsp. salt
    1/4 tsp. paprika
    1 tsp. sugar
    3/4 c. mayonnaise
Preparation
    Mix potatoes, eggs, onions, celery and parsley in large bowl. In small bowl, combine oil, vinegar, salt, sugar and paprika. Pour over potato mixture.
    Toss lightly to combine.
    Cover and refrigerate at least 2 hours.
    Just before serving, toss lightly with mayonnaise.
    Put in serving container.
    Sprinkle with additional chopped parsley.
    Place in cool place until ready to serve.
    Makes 6 to 8 servings.
