Mexican Chicken With Rice - cooking recipe

Ingredients
    1 fryer, cut up or 4 to 5 chicken breasts
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. chopped onion
    1 c. rice, uncooked
    1/2 c. chopped green pepper
    1 small can stewed tomatoes or 1 small can tomato sauce
    2 cloves garlic
    1 1/2 to 2 c. chicken broth
    dash of red pepper flakes
Preparation
    Sprinkle chicken with salt and pepper;\tbrown
    in
    oil. Remove from pan.\tAdd onion, peppers,
    tomatoes,\tred
    pepper flakes and garlic in skillet.\tStir in broth and
    bring
    to
    a boil.
    Add rice.
    Place rice mixture in bottom of
    9 x 13-inch pan.
    Top with chicken pieces.
    Bake covered 1
    hour
    or until done at 375\u00b0.
