Mexican Meat Loaf - cooking recipe

Ingredients
    2 lb. ground beef
    1 bell pepper, chopped
    1 medium onion, chopped
    1 pkg. taco seasoning mix
    1 can Mexican style stewed tomatoes
    2 eggs
    24 oz. jar Pace thick and chunky (save 1/2 for meat loaf top)
    cracker crumbs (enough to bind)
Preparation
    Mix all ingredients and form into a pan.
    Bake 1 hour at 350\u00b0. Add remaining Pace on top and your choice of shredded cheese (optional).
