Boneless Beef Chuck Or Pikes Peak - cooking recipe

Ingredients
    4 lb. beef roast
    1 c. all-purpose flour
    1/4 c. oil or shortening
    4 or more c. hot water
    1 medium onion, sliced
    1 celery rib (optional)
    1 tsp. salt
    1/2 tsp. black pepper
    1/2 tsp. garlic powder
Preparation
    Season
    the
    roast
    with
    the
    salt,
    pepper and garlic powder at
    least 4 hours before baking and keep refrigerated. Preheat oven.
    Dust
    the roast several times over with flour. Put oil or shortening in roaster and brown on all sides, being careful
    not to
    puncture the roast (I use turkey grabbers to turn roast
    on all sides to brown).
    Add the hot water, onion and celery.
    Bake at 400\u00b0 for one hour and then reduce heat to 350\u00b0 and
    bake
    1 1/2
    hours longer.
    If you need to add more water, you may do so at this time.
    Makes its own gravy.
