Cheesecake - cooking recipe

Ingredients
    1/2 c. raisins
    3 Tbsp. flour, divided
    1/4 tsp. salt
    5 eggs, separated
    3 (8 oz.) pkg. cream cheese, softened
    1 c. sugar
    1 Tbsp. grated lemon peel
Preparation
    Soak raisins in hot water for 15 minutes.
    Pat dry and coat with 2 tablespoons of flour.
    Set aside.
    Preheat oven to 350\u00b0. Beat the egg whites and salt until stiff.
    Place the egg white mixture in the freezer for 5 minutes.
    Combine the cheese, sugar, egg yolks and remaining flour; beat until smooth.
    Stir in the raisins and lemon peel.
    Carefully fold in the egg whites.
    Pour the mixture into a greased and floured 9-inch spring-form pan. Bake for 45 minutes, then turn the oven off and leave the cake in the oven until it cools.
