Ingredients

1 watermelon rind
4 c. vinegar
8 lb. sugar
5 Tbsp. whole cloves
5 Tbsp. cinnamon sticks
1 c. salt
Preparation

Prepare rind by removing all red and green.
Cut rind in small pieces, about 2 inches square.
After cutting melon, soak in 1 cup salt and enough water to cover for 12 to 15 hours.
Pour water off; boil in fresh water.
Boil sugar and vinegar for 10 minutes. Add spices, tied in a bag.
Simmer until syrupy, about 2 hours. Add melon; simmer for 1 hour.
Fill jars and seal.
Yields 12 pints.
