Melt-In-Your-Mouth Potato Casserole - cooking recipe
Ingredients

4 or 5 medium Irish potatoes
1 medium onion, chopped
salt and pepper
1 c. sharp Cheddar cheese, grated
1/2 pt. whipping cream
Preparation

Boil unpeeled potatoes in unsalted water until tender.
Allow potatoes to cool, then peel and grate on the coarse side of a box-type grater (do not slice).
In a greased 2-quart baking dish, make a layer of 1/2 the potatoes and 1/2 the onion, then salt and pepper.
Repeat with remaining potatoes and onion.
Salt and pepper again, fairly heavily.
Sprinkle cheese evenly over the top; pour cream over all as evenly as possible.
Cover with aluminum foil; bake at 350\u00b0 for 45 minutes.
Serves 4.
