Jamaican Coconut Pie - cooking recipe
Ingredients

1 1/3 c. coconut
1 unbaked 9-inch pie shell
3 Tbsp. margarine
1/2 c. sugar
3 eggs
1 c. dark corn syrup
1/8 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
2 Tbsp. dark rum or rum flavoring
Preparation

Sprinkle coconut in pie shell.
Cream butter; gradually beat in sugar.
Add eggs and beat well.
Blend in remaining ingredients.
Pour over coconut in pie shell.
Bake at 350\u00b0 for 50 minutes or until slightly puffed on top.
Cool to room temperature.
