Fettucine Ala Alfredo - cooking recipe

Ingredients
    1 c. heavy cream
    1/2 c. fresh grated Parmesan cheese
    dash of fresh grated nutmeg
    3 Tbsp. butter
    dash of fresh coarse ground pepper
    1 lb. fettucine (wide egg noodles)
Preparation
    Choose
    a
    pan
    that
    can accommodate all of the cooked fettucine
    and the sauce.
    Put 1/2 cup cream and the butter in the pan and simmer until the butter is melted.
    Turn off heat. Cook fettucine
    in
    boiling
    water, being very careful not to overcook. The
    noodles
    should be very firm as they will cook again when the sauce is added.
    Drain the noodles and transfer to
    pan containing cream.
    Turn on low heat, add remainder of cream and all of the cheese, pepper and nutmeg.
    Serve immediately with additional grated cheese on the side.
