Baked Cheese Grits - cooking recipe

Ingredients
    2 2/3 c. water
    2/3 c. quick cooking grits
    2 Tbsp. light margarine
    2 large eggs, lightly beaten
    1/2 block light pasteurized cheese product, cut into 1/2-inch cubes
    1/4 tsp. salt
    1/4 tsp. ground red pepper
Preparation
    Bring 2 2/3 cups water to a boil; add grits and cook, stirring often for 5 minutes or until thickened. Remove from heat; add margarine, eggs, cheese, salt and pepper. Stir until well blended. Spoon into a 2-quart baking dish coated with cooking spray. Bake at 350\u00b0 for 40 minutes.
