Stuffed Pepper Casserole - cooking recipe

4 medium peppers
1 lb. ground beef (lean)
1 c. cooked rice
1/4 c. chopped onion
1 tsp. salt
1/8 tsp. pepper
2 (8 oz.) cans tomato sauce
few dashes Texas Pete
shredded Cheddar cheese
Preparation

Lay cut peppers in bottom of baking dish.
Mix the next 5 ingredients together.
Add 4 ounces (1/2 cup) tomato sauce and a few dashes of Texas Pete.
Mix well with meat mixture.
Lay on top of peppers.
Top with remaining tomato sauce.
Bake at 350\u00b0, covered, for about 45 minutes.
Remove cover and top with cheese. Bake until cheese melts.
