Pork Igado - cooking recipe
Ingredients

1 lb. lean pork
1/2 lb. pork liver
2 garlic cloves
ground pepper to taste
2 Tbsp. vinegar
food coloring (achuete)
1 Tbsp. oyster sauce
1 tsp. salt
Preparation

Cut pork into small thin slices, separating the fat from the meat.
Cut liver in a separate container.
Brown fat of pork; add chopped up garlic and brown.
Add chopped up meat and saute with oyster sauce; stir occasionally for 1/2 hour or until meat is cooked.
On a separate dish, soak liver with 2 tablespoons vinegar and ground pepper; mix to cook meat.
Add food coloring (achuete) and salt to taste.
Simmer for another 10 minutes.
(Food coloring is optional.)
Serves 4.
