Sherried Sweet Potatoes Casserole - cooking recipe
Ingredients

8 medium sweet potatoes
2 Tbsp. cornstarch
1/2 tsp. shredded orange peel
6 Tbsp. butter
1/4 c. chopped walnuts
1 c. brown sugar
1/2 tsp. salt
1/2 c. raisins
1/3 c. dry sherry
2 c. orange juice
Preparation

Cook potatoes in boiling salted water until just tender. Drain, peel and cut lengthwise into 1/2-inch slices.
Arrange in 13 x 8-inch baking dish.
Sprinkle with a little salt.
In saucepan, combine brown sugar, cornstarch and salt.
Blend in orange peel, juice and raisins.
Cook over medium heat until thickened and bubbly (stir often).
Add butter, sherry and walnuts, stirring until butter is melted.
Pour over potatoes. Bake in 325\u00b0 oven for 30 minutes, or until potatoes are well glazed.
Serves 8.
