Roasted Onions - cooking recipe

Ingredients
    2 to 3 large Vidalia onions
    3 Tbsp. olive oil
    2 Tbsp. garlic, chopped
    1 tsp. salt or to taste
    1/2 tsp. ground black pepper
    1/2 c. fresh mint
    1/4 c. balsamic vinegar
Preparation
    Remove onion skins and trim ends.
    Cut onions in half from stem to root end.
    In medium bowl, stir together olive oil, garlic, salt, pepper and mint.
    With hands, coat onions with the mixture and place in roaster or shallow dish.
    Bake in preheated 350\u00b0 oven for 30 minutes.
    Baste with dish juices and continue roasting for another 15 minutes or until onions are soft when pierced.
    Remove from oven; drizzle generously with balsamic vinegar.
    Arrange on platter.
    Serves 4.
