Moss Inn Squash Au Gratin - cooking recipe
Ingredients

2 or 3 lb. zucchini, washed, cleaned and sliced
3 tsp. butter
1/2 c. diced onions
1/3 c. diced green bell peppers
2 Tbsp. tomato paste
1/2 tsp. ground comino or cilantro
dash of Tabasco
salt and pepper to taste
pinch of sugar
1/2 c. grated yellow cheese
bread crumbs
Preparation

Boil or steam zucchini in small amount of salted water. Remove from heat and stir with wooden spoon to break into medium pieces.
Pour zucchini in a shallow casserole dish, top with a layer of grated cheese, sprinkle a layer of bread crumbs over the cheese and dot with butter.
Bake for 15 to 20 minutes at 350\u00b0. This may be made the day or morning before serving and baked at the last minute.
