Lemon Sponge Pie - cooking recipe
Ingredients

2 eggs, beat yolks and then beat whites
1 c. sugar
3 Tbsp. all-purpose flour
finely grated rind of 1 lemon
juice of 1 lemon
2 Tbsp. melted butter
1 c. milk
pinch of salt or 1 tsp.
1 unbaked 9-inch pie shell
Preparation

Combine sugar and flour.
Stir in lemon juice and rind; beat in egg yolks, then melted butter.
Stir in milk.
Beat egg whites with salt until fairly stiff peaks form, then fold into lemon mixture until no streaks of white show.
Pour into unbaked pie shell.
Bake at 450\u00b0 for 10 minutes, then at 350\u00b0 for 20 minutes or until crust is lightly browned and filling puffy and touched with brown.
Cool 15 minutes before cutting.
Good warm or cold.
