Date Rice Pudding - cooking recipe

Ingredients
    3 eggs, beaten
    4 Tbsp. light brown sugar
    1 c. milk
    1 tsp. vanilla extract
    1 1/2 c. cooked rice
    1/3 c. chopped pitted dates
Preparation
    Preheat oven to 325\u00b0. In a mixing bowl, beat together eggs, sugar, milk and vanilla. Stir in rice and dates. Pour into a lightly greased 1-quart casserole. Bake for 45 to 50 minutes, stirring 20 minutes, or until set.
