Greek Rice Pudding - cooking recipe

Ingredients
    8 c. milk
    1 c. rice
    1 1/2 c. sugar
    1 lemon rind, grated (optional)
    cinnamon
    2 egg yolks, mixed with a little milk
    1 tsp. cornstarch, mixed into yolk mixture
Preparation
    Put milk on to boil.
    Wash rice and add to the milk.
    When it comes to a boil again, reduce heat and simmer for about a half hour, stirring occasionally.
    Add sugar, lemon rind and egg yolk mixture.
    Simmer a few minutes longer.
    Serve on dessert plates, when cold.
    Sprinkle with cinnamon.
