Ingredients

1 pkg. frozen strawberries
1 c. seedless strawberry jam
2 c. slightly sweetened whipped cream
1 qt. vanilla ice cream
1 (6 oz.) graham cracker crust
2 c. mixed fresh fruits
mint sprig for garnish
Preparation

Drain strawberries and reserve 1/4 cup syrup.
Stir strawberries into 3/4 cup of the jam.
Drop tablespoons of strawberry mixture and heaping soup spoonfuls softened ice cream alternately into pie crust.
Smooth surface with spatula, mounding filling slightly in center.
Cover with plastic lid and freeze at least 4 hours until firm, or up to 1 week.
