Ravioli With Ratatouille(Meatless) - cooking recipe

Ingredients
    1 Tbsp. oil
    1/2 c. chopped onion
    1 garlic clove, minced
    1 small eggplant (1/2-inch cubes, 2 c.)
    2 zucchini, cut lengthwise in half and into 1/4-inch slices
    1 (14.5 oz.) can diced peeled tomatoes (undrained)
    1/2 c. chopped green bell pepper
    1/2 tsp. dried basil
    1/2 tsp. salt
    1/2 tsp. pepper
    1 (9 oz.) pkg. refrigerated or frozen ravioli (any filling)
Preparation
    Heat oil in Dutch oven or large saucepan over medium-high heat until hot.
    Add onion and garlic; cook until tender.
    Stir in remaining ingredients, except for ravioli.
    Bring to boil and reduce heat.
    Cover and simmer 20 minutes or until vegetables are tender.
    Cook uncovered an additional 5 to 10 minutes.
