Charles Sykes' Peppers Stuffed With Shrimp - cooking recipe

Ingredients
    6 Anaheim peppers, seeded
    1 onion, finely chopped
    3 tomatoes, chopped
    1 c. cooked shelled shrimp
    1 c. cooked rice
    1 tsp. minced garlic
    1 tsp. fresh coriander, finely chopped
    1 Tbsp. oil
Preparation
    Heat the oil in a pan and gently fry the onion and garlic. Preheat the oven to 350\u00b0.
    Add the tomatoes, rice, shrimp and coriander to the pan and mix together.
    Remove from heat.
