Corn Bread Muffins - cooking recipe

1 c. sifted flour
1/4 c. sugar
3 tsp. baking powder
3/4 tsp. salt
1 c. corn meal
2 eggs
1 c. milk
1/4 c. melted shortening or cooking oil
Preparation

Heat oven to 425\u00b0.
Grease muffin cups.
Sift together the flour, sugar, baking powder and salt; stir in corn meal.
In a medium size bowl, beat eggs just enough to blend yolks and whites. Stir milk and shortening into eggs.
Add dry ingredients; stir to blend, just until smooth.
Fill greased muffin cups 3/4 full. Bake for 25 to 30 minutes.
