Canadian Bacon And Potato Casserole - cooking recipe

Ingredients
    1 onion, chopped
    1 Tbsp. oil
    1/2 medium red pepper
    1 c. diced Canadian bacon
    6 medium potatoes, peeled and quartered
    1 tsp. salt
    3 Tbsp. butter
    1/4 c. hot milk
    2 eggs, beaten
    2/3 c. Cheddar cheese
    1/4 tsp. salt
    1/4 tsp. pepper
Preparation
    Saute onion in oil.
    Add red pepper and bacon sauteing 1 minute more.
    Place potatoes in pot and cook until tender.
    Drain.
    Mash them and add butter, hot milk, eggs, cheese, salt and pepper.
    Mix until combined.
    Stir in onion bacon mixture.
    Spoon into casserole dish and cook at 350\u00b0 for 30 minutes.
