Cheese Soup - cooking recipe

Ingredients
    1/4 c. butter
    3 onions
    3 celery ribs
    2 grated carrots
    2 cans chicken broth
    2 cans potato soup
    8 oz. Cheddar cheese
    parsley
    Tabasco
    8 oz. sour cream
    3 Tbsp. sherry
    1 c. cooked, cubed chicken breast (optional)
Preparation
    Saute butter, onion, celery and carrots.
    Add broth, soup, cheese and parsley.
    Simmer, covered, 30 minutes.
    Add sour cream. Simmer 15 minutes.
    Add sherry and serve immediately.
