Carrot-Pecan Muffins - cooking recipe

Ingredients
    2 eggs
    1/2 c. oil
    2 tsp. cinnamon
    1 c. grated carrots, packed
    1/2 tsp. salt
    1/4 tsp. baking powder
    1 c. sugar or 3/4 c. honey
    2 tsp. vanilla
    1/2 c. chopped pecans
    1 1/2 c. all-purpose flour
    1/2 tsp. soda
    1 c. raisins
Preparation
    Beat eggs until frothy; add sugar or honey, oil and vanilla. Beat until well blended.
    Add carrots.
    Sift together dry ingredients.
    Mix just until blended.
    Stir in nuts and raisins. Spoon into well-greased muffin tins.
    Bake at 400\u00b0 for 15 to 20 minutes.
    Cool 10 minutes in pans.
