Pear Mincemeat - cooking recipe

Ingredients
    8 lb. pears, peeled, cored and chopped
    4 apples, peeled, cored and chopped
    3 oranges, peeled and chopped
    1 lemon, peeled and chopped
    3 lb. raisins
    2 Tbsp. cinnamon
    1 Tbsp. nutmeg
    2 Tbsp. cloves
    6 c. brown sugar
    1 1/2 c. vinegar
    1 tsp. salt
Preparation
    Simmer ingredients for at least 2 1/2 to 3 hours.
    Ladle into hot, sterilized pint size jars.
    Cover with 2-piece ring seals and process in boiling water bath for 25 to 30 minutes.
    Makes 6 to 8 pints.
