Tomatoes Vinaigrette - cooking recipe

Ingredients
    4 large tomatoes
    1/4 c. plus 2 Tbsp. chopped fresh parsley or 2 Tbsp. dried parsley flakes
    1 clove garlic, crushed
    1/4 c. plus 2 Tbsp. olive oil
    2 Tbsp. vinegar
    1 1/2 tsp. minced fresh basil or 1/2 tsp. dried whole basil
    1 tsp. salt
    1/8 tsp. pepper
    additional chopped fresh parsley (optional)
Preparation
    Slice tomatoes; place in a serving bowl.
    Sprinkle with 1/4 cup plus 2 tablespoons parsley.
    Combine next 6 ingredients in a jar; cover tightly and shake vigorously.
    Pour over tomatoes. Chill 3 hours.
    Sprinkle with additional parsley, if desired. Yield: 8 servings.
