Vidalia Onion Relish - cooking recipe

Ingredients
    22 c. chopped onions
    1 c. chopped sweet red pepper
    2 cloves garlic, minced
    1/3 c. salt
    4 c. ice cubes
    4 1/2 c. sugar
    3 c. white vinegar
    2 Tbsp. mustard seed
    1 1/2 tsp. celery seed
    1 tsp. ground turmeric
Preparation
    Combine onion, sweet red pepper, garlic and salt in large nonmetal container.
    Stir well.
    Place ice cubes on top of onion mixture and let stand at room temperature 3 hours; drain well. Place onion in large pan.
    Set aside.
    Combine sugar and remaining ingredients in saucepan; bring to a boil, stirring until sugar dissolves.
    Add to onion mixture.
    Bring to a boil.
    Boil 5 minutes.
    Pack in hot jars.
    Remove bubbles.
    Process in boiling water for 10 minutes.
