3 egg whites, at room temperature
1/2 c. sugar
1 tsp. vanilla
1/2 tsp. salt
2 c. flaked coconut
1/3 c. all-purpose flour
Preparation

Preheat oven to 325\u00b0.
Lightly grease 2 cookie sheets.
In small bowl, with mixer at high speed, beat egg whites until soft peaks form.
Beating at high speed, gradually beat in sugar, 2 tablespoons at a time, beating well after each addition until sugar is completely dissolved.
Beat in vanilla and salt.
(Whites should stand in stiff, glossy peaks.)
With rubber spatula, gently fold coconut and flour into egg white mixture.
