Low-Fat Veggie Pizzas - cooking recipe

Ingredients
    3 Tbsp. purple onion
    1 clove minced garlic
    1/2 c. fresh mushrooms
    1/3 c. shredded carrot
    1 Tbsp. cilantro
    flour tortillas (two 6-inch)
    3/4 Mozzarella cheese
    1/2 c. kidney beans, drained
Preparation
    Coat skillet with cooking spray.
    Add onion and garlic; saute 1 minute and add mushrooms and carrot.
    Saute 2 minutes; add cilantro.
    Place tortillas on baking sheet; broil 1 minute.
    Turn; broil another minute.
    Top with beans, mushroom mixture and cheese.
    Broil until cheese melts.
