Portuguese Poached Fish - cooking recipe
Ingredients

1 lb. haddock fillets
1 onion, finely chopped
1/3 c. minced fresh parsley
1 clove garlic, crushed
1/2 tsp. tarragon
1/2 tsp. thyme
3 large tomatoes, chopped
Preparation

Place fish in electric skillet and cover with remaining ingredients.
When mixture has come to a boil, simmer, covered for 10 minutes.
Carefully remove fish fillets from the vegetable sauce and place on a serving platter.
Keep the fish warm by covering with foil while boiling down the sauce.
Turn up heat under the vegetables and boil quickly to reduce the mixture by half.
Pour sauce over fish and serve.
Makes 2 servings.
