Potato Cheese Soup - cooking recipe

Ingredients
    3 medium potatoes, cut up
    1 small onion, chopped
    2 Tbsp. flour
    3 Tbsp. butter
    2 Tbsp. snipped parsley
    3/4 tsp. salt
    dash of pepper
    1 c. shredded Swiss cheese
Preparation
    In large saucepan, add potatoes and onion to 1 cup lightly salted boiling water.
    Cover and cook until potatoes are tender. Mash potatoes slightly; do not drain.
    Measure mixture and add enough milk to make 5 cups.
    Blend melted butter, flour, parsley, salt and pepper.
    Stir into potato mixture and cook until thickened and bubbly.
    Add cheese and cook until cheese is melted.
    Serves 4 to 5.
