Potato Candy - cooking recipe

Ingredients
    about 2 c. peanut butter
    1 medium potato, boiled
    2 or 3 Tbsp. butter
    1 tsp. vanilla
    2 boxes confectioners sugar
Preparation
    Mash potato very fine.
    Add butter; use wooden spoon.
    Add confectioners sugar until stiff enough to roll.
    Roll out like pie crust, but in rectangular shape.
    Roll 1/3 of candy mixture at a time (easier to handle).
    Roll on waxed paper or plastic wrap to 1/4-inch thickness.
    Spread with peanut butter.
    Roll up like cinnamon rolls.
    Wrap tightly in plastic wrap.
    Put in refrigerator.
    Slice when ready to eat.
