Microwave Rhubarb Sauce - cooking recipe

Ingredients
    3 c. diced fresh or frozen rhubarb
    1 c. water
    1/2 c. sugar
    1 pkg. cook and serve vanilla pudding mix
Preparation
    In a microwave-safe bowl, combine the rhubarb, water and sugar. Microwave, uncovered, on High for 8 to 10 minutes, until rhubarb is tender, stirring once or twice. Stir in pudding mix until blended; cook 1 or 2 minutes, until thickened, stirring occasionally. Serve over ice cream or use any way you like.
