Chicken Pie - cooking recipe

10 chicken breasts, skinned
3 c. water
1 Tbsp. salt
1 tsp. whole allspice
1 tsp. whole peppercorns
2 bay leaves
3 carrots, peeled and sliced
2 onions, skinned and quartered
2 sticks celery, sliced
5 sprigs parsley
4 oz. sliced ham
2 hard-boiled eggs
1 oz. butter
1 oz. flour
2 to 3 Tbsp. sherry
1 Tbsp. lemon juice
1 tsp. sugar
pinch of ground mace
pinch of pepper
1 egg yolk
1 pkg. Japanese frozen puff pastry
egg (to glaze)

This delicious pie can be prepared early in the day, kept in a cool place and baked just before it is required.
